We too, are planning a cob house in Oregon. Yes, a hot tub!
A wooden roof has been constructed to sit over the top of the tub.

From what Sigi (http://www.buildnaturally.com/)says, all cob are all stone on this climate isn't the best idea. Too difficult to keep warm. We are better suited to strawbale with a cob coating. A small part of the reason we are switching coasts.

hrmm...I dunno, my understanding is that with a nice masonry stove things can be kept warm. Eh, we shall see =)

Hot tub! To be filled with by the natural spring the pops out of the wall behind it :)
